The inventors of the present ice cream searched for an ingredient that is in harmony with ice cream and maintains a good covering power at a storage temperature for ice cream. The inventors discovered that sweet potato is highly suitable ingredient to meet the above propose and achieved the present invention. The flavor of sweet potato is extremely compatible with ice cream, and the condensed moisture of the pasted sweet potato is suitable for the ingredient covering ice cream above -10C. The inventors accomplished a covering rice cake with sweet potato flavor suitable for a covering material of ice cream hardened and stored at and below -15C, wherein at and below -10C the sweet potato paste was added with sugar-based saccharide for obtaining hardness of ice cream and the sweet potato paste was further added with other ingredients for improvement purpose. (Brief description of the invention) The present invention provides an ice cream covered with a process ingredient of sweet potato, wherein ice cream is covered with a process ingredient made purely of sweet potato and suitable for being frozen and stored at and above -10C, i.e., ice cream is covered with the processed sweet potato or the moisture of strained or unstrained unpeeled, heated sweet potato condensed to 30-55wt.%, preferably 35-48wt.%. |
